A Historic Santa Fe Restaurant Experience at The Pink Adobe

Experience one of the best Santa Fe restaurants, Located in the heart of the Santa Fe Historic District, where history meets delicious New Mexican cuisine.

I’ll start by saying I had never heard of The Pink Adobe. Apparently, I am in the minority. This Santa Fe restaurant, The Pink Adobe, is quite well known. It seems to be the most sought-after place to grab a table and a bite to eat when you are in Santa Feโ€”serving New Mexican food with a Cajun flair in the heart of the Santa Fe historic district. It is a must-visit experience when you are in the area.

The Pink Adobe has been a special spot in Santa Fe since 1944, and itโ€™s easy to see why! One reason is its founder, Rosalea Murphy, who helped create its warm and welcoming vibe. She named it for its distinctive rose-colored adobe structure. Another contributing factor is the restaurant’s commitment to using fresh, organic ingredients from local farmers. Plus, you canโ€™t help but be charmed by the history of the building itself, which is around 400 years old! Cozy up in the main dining roomโ€”its oldest section once served as a stableโ€”or take advantage of the lovely patio for a enjoyable outdoor meal.

I started with the Dirty Mexcalito, a cocktail crafted with mezcal and just the right amount of spice. Next, I moved on to the poblano peppers and my main dish, a 12 oz. Steak Dunigan, which is a ribeye topped with mushrooms, green chile, and spinach goodness.

As you eat, you can soak in some serious history. The restaurant is located in the city’s oldest neighborhood, the Barrio de Analco. Plus, it’s right across from the San Miguel Mission, the oldest church in the US. It’s a great place to enjoy a meal and take in the local vibe!

The Dragon Room is located in the building next door to The Pink Adobe. It features a simple menu and a chill vibe that evokes a local bar atmosphere. The atmosphere is laid-back and even has a tree that grows through the floor and out through the ceiling. Plus, it boasts some interesting history. It has its own stories of famous folks who made it their hangout.

The Pink Adobe owns The Inn of the Five Graces, which is located right next to the restaurant. They kindly allowed us to walk around and take a quick look. Itโ€™s definitely worth checking out, and I may consider staying there on my next visit.
